We have taken the British staple of fish and chips and given it a vibrant island makeover for our street food menu. This is not your standard battered cod; it is a full-flavoured, crunchy feast designed to be eaten with gusto.
We use a whole fresh fish, such as snapper or bream, which is seasoned liberally with our house blend of Caribbean spices. It is then deep-fried until the skin is unbelievably crispy and golden brown, while the white flesh inside remains moist and flaky.
The real magic happens with the topping. We dress the hot fish with our signature escovitch pickle. This is a zingy, colourful medley of sliced onions, carrots, bell peppers, and pimento berries, all marinated in vinegary, peppery goodness that cuts through the richness of the fried fish perfectly. Served next to a pile of our steaming, thick-cut chips, it is a textural adventure of crunchy, tangy, and savoury flavours in a convenient takeaway tray.
